Vegan/Gluten Free Protein Balls

I'm forever snacking on protein balls and raw food bars that can easily cost a fortune.  Often they contain very little ingredients yet somehow cost £2+ per individual snack.  On my weekly shop at the weekend I thought I'd lift a couple ingredients up and try my own.  


Protein balls really couldn't be easier, and you don't need to be a member of The Great British Bake Off in order to make them, in fact there is zero baking required.  As long as you have a couple ingredients and a food processor you are good to make these.

What you'll need;
Cashews
Almonds
Dates
Peanut Butter
Chocolate Vegan Protein
Coconut

I hardly need to write up instructions to make these, however in case you want some...
  • Blend up a cup full of Pitted Dates (if you've bought dried dates you'll have to re-hydrate these by soaking in some water for 2+ hours)
  • Add in the rest of your ingredients now (you could sub the nuts for some fruit or seeds)
  • Once all blended together, add some coconut to a bowl and roll the mixture between your hands to make a ball shape, then coat in the coconut.
  • Place on a lined baking tray (otherwise it'll stick like maaaaad) and place in the fridge until set. 
  • Enjoy! 
I was pleasantly surprised and how nice these turned out and I can't wait to try changing up some of the ingredients and experiment with different flavours.
